These homemade toaster strudels made with puff pastry sheets are the best choice for weekend breakfast or brunch. This jam-filled toaster strudel recipe needs just a handful of ingredients and it tastes way better than the store-bought ones.

Make a few or a whole big batch and freeze the rest to use later. The homemade creamy icing will put the store-bought icing to shame and you will never go back to buying them again.

I love making these puff pastry toaster strudels filled with different jams. This week, I baked them with my homemade spiced apple jam and store-bought strawberry jam. With the berry season coming soon, I can't wait to make the toaster strudel with fresh blueberry and blackberry jams.

Why make toaster strudel at home?

My boys love the store-bought jam-filled toaster strudels. Lately, I have been buying them from stores much too often and that is when I realized, I should be making these at home.

I always have a box of puff pastry sheets in the freezer. And of course, we all would have some jam or preserve at home. And that is all we need to make these homemade jam-filled toaster strudels.

Few other reasons why I would make the toaster strudel at home -

  • Customizing the flavors when we make the toaster strudel at home is so easy. We can use any jam or preserve we like. We could add as little or more of the filling as well.
  • The homemade toaster strudels are so fresh and they are irresistible when they are eaten warm, right after they come out of the oven. This quality of freshness and deliciousness will not come in store-bought ones.
  • When we have all the ingredients at home, making fresh puff pastry toaster strudel is much more economical than buying.
  • And it is a great way to involve kids in cooking and baking. It is so much fun to make these toaster strudels for weekend brunch with kids helping in shaping and filling the pastries.
  • And there is no more fighting for the tiny packet of icing that comes with the store-bought strudel. We make our icing drizzle and it is the best!

Puff pastry sheet - These sheets are the star of the homemade toaster strudel recipe. The package comes in a pack of two sheets and we will make a total of 6 toaster strudel. We can buy the puff pastry sheet from any grocery store and they are usually in the freezer aisle.

Jam - Use any jam of your choice. I have used spiced apple jam and strawberry jam.

Corn starch - I mix a little cornstarch in my jam to make it stiffer and stay within the strudel when baking. This is optional and we can use the jam as is also.

Heavy cream - I use heavy cream instead of egg wash to seal the edges of the pastry sheet and also to glaze the top of the toaster strudel before baking. We could egg-wash instead.

Icing ingredients - We need confectionary sugar, vanilla, and heavy cream or milk to make delicious homemade icing to drizzle over the toaster strudels.

Step-by-step process

  • Thaw the puff pastry sheet as instructed on the box. It is very important to thaw the sheets perfectly.
  • Add 1 teaspoon of cornstarch to each of the jams and mix well. Skip this step if not using cornstarch.
  • Preheat the oven to 400 F. Layer a baking sheet with parchment paper or a silicon mat. I like to layer mine just in case there is an accident when baking and the jam seeps out.
  • Once thawed, open the sheets and separate them. Slightly roll the sheets to make them even and then cut each sheet into 6. This will make 3 strudels. Repeat the same with the other sheet.
  • Spread about 1 to 1 ½ tablespoons of jam filling in the center of half the sheets. Leave about ¼ inch space on all sides.
  • Brush the sides with heavy cream or egg wash.
  • Now place the other half of the sheets over the layered ones and press it to seal. Use a fork to gently crimp the sheets to seal them well.

  • Place the prepared toaster strudel onto the prepared baking sheet. Brush the pastries with heavy cream or egg wash.
  • Bake them in the preheated 400 F oven for about 18 to 20 minutes or until golden brown.

To make the icing

  • When the toaster strudel is baking, prepare the icing. Mix about ½ teaspoon of vanilla extract with 1 cup of confectionary sugar and mix well.
  • Slowly add about 1 to 1 /2 tablespoons of heavy cream or milk and whisk well. Adjust the consistency by adding more milk. I like to keep my icing a little thicker.

  • Place the icing in a small plastic bag. I use a ziplock bag. Seal the bag and then snip a tiny hole in a corner to squeeze out the icing over the toaster strudels.
  • Once the toaster strudels come out of the oven, let them cool down a bit on a wire rack.
  • Then drizzle the icing over the strudels and enjoy!

Expert Tips

  • Choose a good quality puff pastry sheet when making homemade toaster strudels. If you don't have access to store-bought puff pastry sheets, you could make your own as well.
  • Roll the puff pastry sheet evenly so they bake uniformly.
  • Do not overfill the toaster strudels. I am guilty of doing this often and ending up with an overly sweet pastry. Also many times, my filling seeps out when baking.
  • If your kitchen is warm and the toaster strudels become very soft, place the shaped ones in the refrigerator for about 30 minutes and then bake.
  • After baking, let the toaster strudels cool a little before drizzling the icing.

How to store homemade toaster strudel?

I usually make fresh puff pastry toaster strudel on weekends for brunch. Between 4 of us, I am usually left with 2 extra strudels. I freeze the remaining two and they freeze well.

Place them between parchment paper and store them in a freezer-safe bag or storage container and freeze. They are good for up to 3 months. My boys usually finish it during the week as an after-school snack.

To reheat the frozen toaster strudels, use an air fryer or oven or a toaster.

Frequently asked questions

Why did my toaster strudel turn out soggy?

Uneven baking or too soggy filling can cause the toaster strudels to be soggy. Make sure to use less filling and roll the puff pastry sheet evenly for uniform baking.

Can I use a different filling other than jam for the toaster strudel?

Yes. we can use a sweet cream cheese filling or cream cheese and jam together. We can also fill it with savory fillings and they will be similar to the Indian vegetable puffs.

Why does my filling leak from the toaster strudel?

If the filling is too liquid or if the strudels are overfilled, they could leak. Also if the edges are not sealed properly, the filling could leak during baking.

Equipment

Ingredients

  • 1 box Puff pastry sheet (2 sheets)
  • 3 Tablespoon Apple Jam
  • 3 Tablespoon Strawberry Jam
  • 2 teaspoon Cornstarch
  • 2 Tablespoon Heavy cream (can use egg wash)

To make icing/drizzle

  • 1 Cup Powdered sugar/confectionary sugar
  • ½ teaspoon Vanilla
  • 1 ½ Tablespoon Heavy cream (can be substituted with milk)

Instructions

  • Thaw the puff pastry sheet as instructed on the box. It is very important to thaw the sheets perfectly.

    1 box Puff pastry sheet

  • Add 1 teaspoon of cornstarch to each of the jams and mix well. Skip this step if not using cornstarch.

    3 Tablespoon Apple Jam, 3 Tablespoon Strawberry Jam, 2 teaspoon Cornstarch
